Pearl is most versatile and shelf-stable. Pink is best for visual presentation in restaurants. Blue is preferred in cooler climates. King oyster (P. eryngii) has the densest, meatiest texture — best for premium foodservice.
By air to UAE, Singapore, Sri Lanka in 24–36h with reefer logistics. For longer routes, dried is more practical.
We work with farms using both. For premium grade we prefer pasteurised straw or supplemented sawdust; we test for substrate residue.
